Abstract

L. buchneri 4t1, L. paraplantarum SF9B, L. brevis SF15B, L. brevis D6, L. brevis ZG1 i L. helveticus M92 su probiotički sojevi kod kojih je SDS-PAGE metodom dokazana prisutnost S-proteina. Pretpostavlja se da ovi proteini imaju važnu biološku ulogu jer bakterija troši znatni dio metaboličke aktivnosti stanice za njihovu sintezu. U ovom radu je provedena liofilizacija probiotičkih sojeva L. buchneri 4t1, L. paraplantarum SF9B, L. brevis SF15B, L. brevis D6, L. brevis ZG1 i L. helveticus M92, te je ispitan mogući zaštitni utjecaj S-proteina napreživljavanje ovih bakterija tijekom liofilizacije. Broj stanica prije i nakon liofilizacije odreĎen je indirektnom metodom. Rezultati su pokazali da prisutnost S-proteina smanjuje smrtnost stanica tijekom liofilizacije, što dokazuje zaštitnu ulogu ovog proteina te ga čini poželjnim kod probiotičkih sojeva.

Abstract (english)

Probiotic strains L. buchneri 4t1, L. paraplantarum SF9B, L. brevis SF15B, L. brevis D6, L. brevis ZG1 i L. helveticus M92 have a surface S-protein which was identified by SDS-PAGE. It is assumed that these proteins have an important biological role because bacteria consume a substantial part of the metabolic activity of cells for their synthesis. In this work the freeze-dryingof the wet biomass of the probiotic strains L. buchneri 4t1, L. paraplantarum SF9B, L. brevis SF15B, L. brevis D6, L. brevis ZG1 i L. helveticus M92 was performed and moreover an possible protective influence of the S-protein on the bacterial viability during freeze-drying was observed. The number of cells before and after freeze-drying was determined by indirect method and the percentage of the cell survival was calculated. The results have shown that the presence of S-protein reduces cell death during the freeze-drying,which provesthe protective role of this protein making it desirable for probiotic strains.
