Abstract
Cilj ovog rada je prikazati uvođenje i primjenu HACCP sustava u malom proizvodnom pogonu pivovare Medvedgrad. U ovom radu određene su kritične kontrolne točke, te je uspostavljen sustav sljedivosti. Izrađene su radne upute i obrasci u cilju uspješne provedbe HACCP sustava.
Abstract (english)
The aim of this work is to present the implementation and application of HACCP system in a small brewery Medvedgrad. In this work the critical control points are designated and traceability system is introduced. Work instructions and forms are also presented in order to perform successfull implemention of the HACCP system.
