Abstract

U posljednjih desetak godina postoji trend povećanja proizvodnje smokava i potrebe za njima i njihovim prerađevinama zbog njihove nutritivne vrijednosti i blagotvornog učinka na organizam. U ovom radu opisana je tehnologija proizvodnje džema od suhih smokava. Na osnovu suvremene tehnologije izrađen je idejni tehnološki projekt pogona za proizvodnju džema od suhih smokava. U njemu su dana tehnološka rješenja i smještaj linija za sušenje i fumigaciju smokava te za njihov prijem, pranje, namakanje i preradu u džem. Na osnovi projektnog zadatka odabrane su makrolokacija, mikrolokacija i situacijski plan za izgradnju predviđenog pogona. Zgrada pogona sadrži proizvodne i neproizvodne prostorije projektirane u svrhu tehnologije, odnosno da omoguće nesmetano i što efikasnije odvijanje proizvodnog procesa i prometa ljudi i materijala.

Abstract (english)

In the last ten years there is a trend of increased production of figs and the need for them and their processed products because of their nutritional value and beneficial effects on the body. This work describes the technology for the production of dried fig jam. Based on selected modern technology a preliminary technological project facility for the manufacture of dried figs jam has been created. In it there are technology solutions and placement of the drying and fumigation of figs and for their reception, washing, soaking and processing into jam. On the basis of project assignment macrolocation, microlocation and layout of facilities scheduled for construction were chosen. The building contains a manufacturing and non-manufacturing facilities designed with the purpose to serve the technology and to enable the smooth and efficient operation of the production process and transport of people and materials.
