Abstract | Cilj završnog rada bio je odrediti parametre kakvoće domaćeg bijelog vina sorte Pinot sivi iz vinogorja Požega–Pleternica, podregije Slavonija, berba 2015. Osnovna analiza vina je izvršena u analitičko-kemijskom laboratoriju Prehrambeno-biotehnološkog fakulteta gdje je određen udio etanola, koncentracija neprevrelog šećera, slobodnog, vezanog i ukupnog sumpora, te hlapljivih i ukupnih kiselina. Papirnom kromatografijom utvrđena je prisutnost vinske, jabučne i mliječne kiseline, a HPLC-metodom određene su koncentracije glukoze, etanola, glicerola, mliječne i octene kiseline. Svi analizirani parametri koji podliježu zakonskoj regulativi, nalaze se unutar dopuštenih granica. |

Parallel abstract (English) | The aim of final work was to determine quality parameters of domestic white wine, variety Pinot gris, from Požega-Pleternica vineyards, subregion Slavonija, year 2015. Basic analyses were preformed in the analytical chemical laboratory at Faculty of Food Technology and Biotechnology, Department of Biochemical Engineering where ethanol, residual sugars, free and total sulfur dioxide as well as total and volatile acids were determined. With thinlayer chromatography tartaric, malic and lactic acid where detected, and HPLC-method was used to determine glucose, ethanol, glycerol, lactic and acetic acids. The values of analysed parameters of domestic wine Pinot gris, that are subject of legal regulations, are found to be in the permitted range. |
