Abstract

Gljive (makrofungi ili „više gljive“) se mogu koristiti u razne svrhe - kao hrana, za proizvodnju krmiva, u humanoj i veterinarskoj medicini, u kozmetici, za proizvodnju enzima te u zaštiti okoliša. Najveći dio makrofunga spada u odjeljke Ascomycota i Basidiomycota. S biotehnološkog stajališta makrofungi su prilično zanemarena skupina za razliku od nižih gljiva koje imaju puno širu primjenu. Submerzni uzgoj makrofunga smatra se obećavajućom alternativom za uspješnu proizvodnju polisaharida i drugih bioaktivnih sastojaka ljekovitih gljiva. Posljednjih godina radi se na razvoju submerznog uzgoja gljiva s ciljem proizvodnje komercijalno važnih produkata. Submerzni uzgoj omogućuje bolju kontrolu proizvodnje te standardizaciju procesa i proizvoda, a također i lakše vođenje procesa. Povećanje prinosa proizvoda i razvoj novih proizvodnih sistema pridonijet će širenju primjene ove tehnologije.

Abstract (english)

Mushrooms (macrofungi or higher fungi) can be used for a variety of purposes - in food and feed production, in human and veterinary medicine, in cosmetics, for enzyme production and for environmental protection. Most of mushrooms belong to the Ascomycota and Basidiomycota sections. In contrast to lower fungi, which have much wider application, macrofungi are mostly neglected group from the biotechnological standpoint. Submerged fermentation of the macrofungi is considered as a promising alternative for efficient production of the polysaccharides and other bioactive compounds of medicinal mushrooms. In recent years the use of submerged cultivation of macrofungi for the production of commercially important products has increased. Submerged fermentation can provide better process control, as well as standardization of process and its products. Expansion of the biotechnological use of macrofungi will be facilitated by increase in product yields and the development of new production systems.
