Abstract

Živa je teški metal koji se akumulira u svim organizmima, posebice u slatkovodnim i morskim organizmima koji su neizostavne namirnice u ljudskoj prehrani, pa se tim putem živa može akumilirati i u ljudskom organizmu. Visoke koncentracije žive toksične su za živčani, kardiovaskularni i reproduktivni sustav ljudi. Stoga je cilj ovog rada bio utvrditi koncentraciju žive u dvadeset i četiri uzoraka slatkovodnih i morskih organizama primjenom atomske apsorpcijske spektrofotometrije (ASS) direktnim analizatorom žive DMS-80 i usporediti dobivene rezultate s Pravilnikom o najvećim dopuštenim količinama određenih kontaminanata u hrani (NN 54/08) i Pravilnikom o izmjenama i nadopunama pravilnika o najvećim dopuštenim količinama određenih kontaminanata u hrani (NN 78/11). Istraživanje je pokazalo da samo dva analizirana uzorka sadrže koncentracije žive veće od dozvoljenih u navedenim Pravilnicima.

Abstract (english)

Mercury is a heavy metal that accumulates in all organisms, particularly in freshwater and marine organisms that are eaten foods in the human diet, and in this way mercury can be accumulated in human body. High concentrations of mercury are toxic to the nervous, cardiovascular and reproductive systems of people. Therefore, the aim of this study was to determine the concentration of mercury in twenty-four samples of freshwater and marine organisms by atomic absorption spectrophotometry (ASS) by direct mercury analyzer DMS-80 and to compare these results with the values prescribed in the Regulations on maximum levels for certain contaminants in foodstuffs (NN 54/08) and the Regulations on amendments and supplements regulations on maximum levels for certain contaminants in foodstuffs (NN 78/11). Research has shown that only two samples analyzed contain higher concentrations of mercury than allowed in these Regulations.
