Abstract

Iz tradicionalno proizvedenog sira u salamuri izolirano je 19 različitih autohtonih izolata bakterija mliječne kiseline (BMK), te je provedeno istraživanje in vitro adhezije u okviru probiotičkog koncepta. Adhezija na površinu crijevnih epitelnih stanica je bitan preduvjet za kolonizaciju probiotičkih sojeva u gastrointestinalnom traktu (GIT) jer omogućava dugotrajnije djelovanje probiotičkih bakterija na crijevnu mikrofloru i imunološki sustav domaćina, te spriječava kolonizaciju nepoželjnih patogenih bakterija. Ispitana je stoga adhezija autohtonih izolata BMK na Caco-2 epitelne stanice. Prema dobivenim rezultatima, svi ispitivani bakterijski sojevi su se vezali na površinu Caco-2 epitelnih stanica, a adhezija sojeva BGGO7-25 i BGGO11-17 pokazala se najuspješnijom.

Abstract (english)

From traditionally made white pickled cheese, 19 autochthonous lactic acid bacteria (LAB) were isolated and examined for in vitro adhesion in the frame of probiotic concept. Adhesion to intestinal epithelial cell surface is a major prerequisite for the colonisation of the gastrointestinal tract (GIT) by probiotic strain what enables longer influence of the probiotic on intestinal microflora and imunostimulation of the host, additionally preventing colonisation of the pathogens. Hence adhesion of the autochthonous LAB to Caco-2 epithelial cells was investigated. According to the results, all examined autochthonous LAB have shown in vitro adhesion to intestinal epithelial cells. Among them, strains BGGO7-25 and BGGO11-17 adhered the best to Caco-2 epithelial cells.
