Abstract

Zearalenon je mikotoksin koji uzrokuje neplodnost, pobačaj te je štetan po zdravlje ljudi i životinja, posebno svinja, jer je prisutan u brojnim namirnicama i krmivima. Termostabilan je i nalazi se u mnogim žitaricama, kao što su kukuruz, ječam, zob, pšenica, riža te u kruhu. Zadnjih nekoliko godina posvećuje se velika pozornost primjeni bakterija mliječne kiseline u vezanju i uklanjanju mikotoksina iz hrane i krmiva. U ovom radu je istražena sposobnost bakterija mliječne kiseline Lactobacillus rhamnosus GG (ATCC 53103) i Lactobacillus plantarum A da vežu zearalenon. Dobiveni rezultati su pokazali da L. rhamnosus GG i izolat L. plantarum A mogu vezati zearalenon u ovisnosti o vremenu inkubacije, jer se dužim vremenom dio vezanog mikotoksina otpušta natrag u podlogu. Određivanje koncentracije zearalenona provedeno je kompetetivnim ELISA testom. Primjena bakterija mliječne kiseline može biti korisna za ljude i životinje izložene zearalenonu. U budućnosti će istraživanja na bakterijama mliječne kiseline kao funkcionalnog modela adsorpcije mikotoksina u 'in vivo' uvjetima pokazati njihov realan učinak u vezanju mikotoksina.

Abstract (english)

Zearalenone is a micotoxin that causes infertility, miscarriage and is harmful for the health of people and animals, swine particularly, because it is a part of many groceries and forage. It is termostable and is found in many grains, such as corn, barley, oat, wheat, rice and bread. During the last few years there has been a lot of attention towards the application of lactic acid bacteria for binding and removing micotoxins from food and forage. This study explored the ability of lactic acid bacteria Lactobacillus rhamnosus GG (ATCC 53103) and Lactobacillus plantarum A to bind with zearalenone. The results showed that L. rhamnosus GG and izolat L. plantarum A can bind with zearalenone depending on the time of incubation, because the longer the time a part of the attached micotoxins are released back onto the base. Determining the concentration of zearalenone was done by using the competitive ELISA test. Using lactic acid bacteria can be useful for humans and animals exposed to zearalenone. Future research on lactic acid bacteria as a functional model of adsorption of micotoxins in 'in vivo' conditions will show the realistic effect of these bacteria in the binding of micotoxins.
