Abstract

Cilj ovog rada bio je odrediti razliku odnosno sličnost okusa hrane za dojenčad i malu djecu uz pomoć elektronskog jezika. Elektronski jezik korišten u ispitivanju je α-Astree koji se temelji na sedam potenciometrijskih senzora. Analizirano je 32 uzorka hrane za dojenčad i malu djecu. Na temelju podataka dobivenih mjerenjem odaziva senzora obrađenih multivarijantnom analizom podataka (PCA) može se zaključiti da postoje razlike unutar uzoraka za pojedine dobne skupine dojenčadi što upućuje i na razlike u kemijskom sastavu te da uzorci namijenjeni različitim dobnim skupinama pokazuju tendenciju grupiranja prema proizvođaču.

Abstract (english)

The aim of this study was to determine the differences and similarities in taste of infant formulas and young children with the help of an electronic tongue. The electronic tongue used in the study was α-Astree based on seven potentiometric sensors. The study included 32 samples of infant formulas and young children. Based on data obtained by measuring the response of the sensors and subsequently treated by multivariate data analysis (PCA) can be concluded that there are differences among the samples for each age group of infants which indicates differences in chemical composition of samples and that the samples meant for different age groups tend to group according to the manufacturer.
