Abstract

Budući da uzorci slavonskog kulena, proizvedeni u malim domaćinstvima na tradicionalan način, pripadaju rizičnoj skupini namirnica koje mogu biti izvor različitih uzročnika bolesti, svrha ovog rada bila je odrediti mikrobnu populaciju i mogu u prisutnost mikotoksina aflatoksina B1 i okratoksina A u uzorcima slavonskog kulena. Kao dio autohtone mikrobne populacije i potencijalnih starter kultura koje su odgovorne za aromu i teksturu određenog tradicionalnog mesnog proizvoda, izolirane su, osim bakterija mliječne kiseline i bakterije iz roda Staphylococcus. Dominantna mikrobna populacija bakterija mliječne kiseline bio je izolat Lactobacillus plantarum K1, a Staphylococcus xylosus SK1 i Staphylococcus warneri SK2 kao dominantna flora stafilokoka. Autohtona mikrobna flora pokazala je značajnu antimikrobnu aktivnost prema patogenim mikororganizmima. Analiza određivanja moguće prisutnosti mikotoksina provedena je ELISA metodom, a u ispitivanim uzorcima određene su koncentracije okratoksina A u rasponu od 1,0 do 1,49 ng/g, te aflatoksina B1 u rasponu od 0,1 do 0,3 ng/g.

Abstract (english)

According to the facts that the samples of Slavonian kulen, produced in small households in the traditional way, belong to the risk group of foodstuffs that may be the source of various disease causing agents, the purpose of this study was to determine the microbial population and possible presence of mycotoxins aflatoxin B1 and ochratoxin A in samples of Slavonian kulen. Lactic acid bacteria and bacteria of the genus Staphylococcus were isolated in study specimens as potential starter cultures and part of the autochthonous microbial population responsible for the flavor and texture of a particular traditional meat product. Identification of isolated lactobacilli showed domination of Lactobacillus plantarum K1, while Staphylococcus xylosus SK1 and Staphylococcus warneri SK2 were found to dominate the staphylococcal microbiota. Indigenous microbial population showed significant antimicrobial activity towards pathogen microorganisms. Possible presence of mycotoxins detemination was performed by ELISA method, and the concentration of ochratoxin A ranged from 1.0 to 1.49 ng/g and of aflatoxin B 1 fro m 0.1 to 0.3 ng/g .
