Abstract

U ovom radu istražen je utjecaj eteričnih ulja ružmarina i kadulje različitih kombinacija i različitih koncentracija na rast najčešćih patogena iz hrane bakterije Escherichia coli 3014, Salmonella sp. 3064 i Listeria monocytogenes ATCC 2356. Mikrodilucijskom metodom određene su minimalne bakteriocidne koncentracije eteričnih ulja. Minimalna bakteriocidna koncentracija eteričnog ulja ružmarina i kadulje za bakterije E. coli i Salmonella sp. bila je 0,625 %(v/v) odnosno 1,25 % (v/v) za bakteriju Listeria monocytogenes. Sinergistički učinak eteričnih ulja utvrđen je na rast bakterije Salmonella sp., dok je na rast E. coli i L. monocytogenes uočen aditivan, indiferentan, pa čak i antagonistički učinak.

Abstract (english)

In this study, the influence of essential oils of rosemary and sage on the growth of most common food pathogens, Escherichia coli 3014, Salmonella sp. 3064 and Listeria monocytogenes ATCC 2356, was determined. Experiments were carried out with various concentrations and various combinations of essential oils. Minimal bactericidal concentration and synergistic effect of essential oils were determined by microdilution method. Minimal bacteriocidal concentration of rosemary and sage essential oils for bacteria Escherichia coli and Salmonella sp. was observed at 0,625 % (v/v), and for bacteria Listeria monocytogenes at 1,25 % (v/v). Synergistic effect was observed on the growth of bacteria Salmonella sp., while on the growth of E. coli and L. monocytogenes additive, indifferent and antagonistic effects were observed.
