Abstract

Majčino mlijeko je složena biološka tekućina koja se zbog svog sastava i sadržaja nutrijenata smatra idealnom hranom za dojenčad. Masti su posebno važna komponenta mlijeka jer osiguravaju gotovo polovicu njegove energetske vrijednosti, a sastav masnih kiselina je od presudne važnosti za razvoj dojenčeta. Cilj rada bio je odrediti udjele ukupnih masti u uzorcima majčina mlijeka primjenom dviju metoda – metode po Soxhelt-u i metode po Gerber-u, te odrediti profil masnih kiselina majčina mlijeka primjenom plinske kromatografije. Rezultati rada pokazali su da je udio ukupnih masti u ispitivanim uzorcima majčina mlijeka nešto veći u usporedbi s rezultatima drugih autora. Udjeli zasićenih, mononezasićenih i polinezasićenih masnih kiselina ispitivanih uzoraka u skladu su s rezultatima iz literature. Trans masne kiseline prisutne su u ispitivanim uzorcima u manjem udjelu u usporedbi s rezultatima iz literature.

Abstract (english)

Breast milk is a complex biological fluid which is considered an ideal food for newborn due to it's composition and nutrient content. Fat is considered as a very important milk nutrient because it provides almost half of milk's energy value. Fatty acid composition is crucial for normal development of the infant. The aim of this study was to determine total fat content in breast milk samples using two methods – Soxhlet method and Gerber method, and also to determine the fatty acid profile of breast milk using gas cromatography. Results showed that the total fat composition of the samples is slightly higher compared to the results of other authors. Contents of saturated, monounsaturated and poliunsaturated fatty acids match the reference results. Trans fatty acids in analized samples of breast milk are found in smaller amounts compared to the results from literature.
