Abstract

Okratoksin A je sekundarni metabolit plijesni rodova Aspergillus i Penicillium. Za ovo istraživanje korišteno je 7 uzoraka kulena, a cilj rada bio je odrediti moguću prisutnost okratoksina A u uzorcima. Analiza je provedena ELISA metodom, a za očitanje i izračunavanje rezultata korišten je Neogen kit – Veratox 8610. Rezultati su očitavani na čitaču mikrotitarskih pločica (Tecan, Sunrise), pri apsorbanciji od 650 nm. U četiri od sedam uzoraka slavonskog kulena sa kojih su izolirane plijesni dokazana je prisutnost okratoksina A od 0,02-0,057 μg×kg-1.

Abstract (english)

Ochratoxin A is a secondary metabolite of moulds from genus Aspergillus and Penicillium. For this study the 7 samples of «kulen» were used, and the aim of this study was to determine the possible presence of ochratoxin A in samples. Analysis was performed by ELISA method, and for reading and calculation of results the Neogen kit – Veratox 8610 was used. The results were reading on a microtiter plates reader (Liquid, Sunrise), on the absorbance wavelength of 650 nm. In four of seven samples of the «Slavonian kulen», from which the moulds were isolated, the presence of ochratoxin A, from 0.02 to 0.057 μg×kg-1, was demonstrated.
