Abstract

Aflatoksin M1 potencijalni je karcinogen za ljude, te njegova prisutnost u mlijeku i mliječnim proizvodima predstavlja opasnost za ljudsko zdravlje. Ovim istraživanjem određivana je koncentracija aflatoksina M1 u 26 uzoraka mlijeka i mliječnih proizvoda, kompetitivnom ELISA metodom. Aflatoksin M1 detektiran je u svih 26 uzoraka. Koncentracija aflatoksina M1 u 7 istraživanih uzoraka mlijeka bila je ispod zakonski dopuštene koncentracije koja u Republici Hrvatskoj iznosi 0,05 μg kg-1. U istraživanim uzorcima mliječnih proizvoda detektirane koncentracije aflatoksina M1 bile su znatno više u usporedbi s uzorcima mlijeka, što je bilo i očekivano. Najviša dopuštena koncentracija aflatoksina M1 u gotovim mliječnim proizvodima u Republici Hrvatskoj nije propisana.

Abstract (english)

Aflatoxin M1 is potential human carcinogen. Its presence in milk and dairy products represents risk for human health. In this study, the concentration of aflatoxin M1 in 26 milk and dairy product samples was determined by ELISA method. Aflatoxin M1 presence was detected in all 26 samples. Level of aflatoxin M1 found in all 7 milk samples were under the maximum permissible level of aflatoxin M1 in milk which is in Republic of Croatia set to 0.05 μg kg-1. As expected, concentrations of aflatoxin M1 in dairy product samples were significantly higher when compared to milk samples. Maximum permissible level of aflatoxin M1 in finished dairy products in Republic of Croatia has not yet been established.
