Abstract | U ovom radu analizirani su uzorci kestena iz nekoliko različitih prirodnih staništa. Analizirano je 30 uzoraka sa područja Gvozda, Planine Gornje i Donje, Srebrenice, Topuskog, Ulcinja i Vojnića. Određen je osnovni kemijski sastav kao što je udio vode, udio masti, udio bjelančevina, udio pepela te udio ukupnih ugljikohidrata. Rezultati su pokazali da se udio vode kretao od 41,95 % do 51,89 %, udio masti od 2,96 % do 4,56 %, udio bjelančevina od 1,59 % do 1,64 %, udio pepela od 2,79 % do 3,63 % te udio ukupnih ugljikohidrata od 89,88 % do 90,95 %. Utvrđena je statistički značajna razlika između područja za sve istraživane fizikalno-kemijske parametre. |
Abstract (english) | The aim of this study was to analyze some samples of chestnuts from several different natural habitats. 30 samples were analyzed from areas of Gvozd, Planina Gornja and Donja, Srebrenica, Topusko, Ulcinj and Vojnić. Basic chemical composition of chestnuts has been analyzed such as water content, fat content, protein content, ash content and content of total carbohydrates. It was found that water content was between 41,95 % and 51,89 %, fat content between 2,96 % and 4,56 %, protein content between 1,59 % and 1,64 %, ash content between 2,79 % and 3,63 % and carbohydrates content between 89,88 % and 90,95 %. Statistically significant differences were determined between different areas for all of the investigated physic-chemical parameters. |
