Abstract

Cilj ovog rada bio je utvrditi kakvoću prehrane vegetarijanki i ustvrditi da li postoje razlike u prehrani između vegetarijanki i omnivora. Istraživanjem je obuhvaćeno po 46 ispitanica vegetarijanskog, odnosno omnivorskog načina prehrane. Dob ispitanica je u rasponu od 21 do 38 godina. Prosječan unos energije i nutrijenata kod vegetarijanki utvrđen je sedmodnevnim dnevnikom prehrane, a kod omnivora kvantitativnim upitnikom o učestalosti konzumiranja hrane i pića (Quantitative Food Frequency Questionnaire, Q-FFQ). Procjena energetskog i nutritivnog unosa izražena je s obzirom na prehrambene preporuke (Recommended Dietary Allowances, RDA) i referentni prehrambeni unos (Dietary Reference Intakes, DRI). Utvrđeno je da vegetarijanke konzumiraju manje energije, vitamina B12, željeza, kalcija, selena i kalija od preporuka. Neadekvatan unos kod omnivora je utvrđen za folat i željezo. Statistički značajna razlika između skupina utvrđena je za većinu parametara, s iznimkom prehrambenih vlakana, vitamina C, folata, magnezija i mangana.

Abstract (english)

The aim of this study was to assess diet quality of vegetarian women and find out whether there are differences in diet between vegetarian and omnivorous women. The study included a 46 vegetarian and 46 omnivorous women. Respondent's age ranged from 21 to 38 years. The average intake of energy and nutrients in vegetarian women were determined by the 7-day food record, while in omnivorous women quantitative questionnaire about the frequency of consumption of food and beverages (Q-FFQ) was used. Estimation of energy and nutrients intake was expressed with regard to the dietetic recommendations (Recommended Dietary Allowances, RDA) and the reference food intake (Dietary Reference Intakes, DRI). It was found that vegetarian women consume less energy, vitamin B12, iron, calcium, selenium and potassium according to recommendations. Inadequate intake in omnivorous women is recorded for folate and iron. Statistically significant difference between the groups was found in majority of parameters, with the exception of dietary fiber, vitamin C, folate, magnesium and manganese.
