Abstract

HACCP sustav je sistematičan i znanstveno utemeljen sustav analize opasnosti i kontrole kritičnih točaka koji identificira, definira, vrednuje i upravlja potencijalnim opasnostima vezanim uz hranu. HACCP sustav je u Hrvatskoj dio zakonske obveze te ga je potrebno uspostaviti u svim subjektima u poslovanju s hranom do 01. siječnja 2009. Svrha ovog rada bila je pripremiti i prikazati pripremne radnje za uvođenje i implementaciju HACCP sustava u veledrogeriju Milsing registriranu 1999. a koja se isključivo bavi uvozom i distribucijom gotovih proizvoda – dijetetskih i prehrambenih dodataka u originalnom pakiranju proizvođača. Rad je izrađen u veledrogeriji Milsing koristeći sedam načela HACCP sustava. Provedene su analiza opasnosti, određene kritične kontrolne točke i njihove kritične granice, uspostavljen sustav nadzora, utvrđene korektivne mjere te su uspostavljeni postupci verificiranja i dokumentiranja. Rezultati rada pokazali su da je veledrogerija zadovoljila neophodne pripremne radnje za uvođenje i implementaciju HACCP sustava.

Abstract (english)

HACCP system is systematic and science based system of hazard analysis and critical points control which identifies, defines, validate and manage potential danger in food operations. HACCP system is a part of legal obligation in Croatia for all subjects in food business and should be implemented by January 01. 2009. Goal of this thesis was to prepare and present all actions done in pharmaceutical wholesale company Milsing registered in 1999. which is dealing only with finished products – dietary and food supplements in original packaging- in prior to application of HACCP. Thesis was done using the seven principles of HACCP. Hazard analysis was done, critical control points are identified and their critical limits are established, monitoring procedures and corrective actions are established and procedures of verification and documentation are determined. Results have indicated that pharmaceutical wholesale company has successfully performed all necessary actions in prior to applicate and implement HACCP system.
