Abstract

Cilj ovog rada je bio utvrditi mikrobiološku i zdravstvenu ispravnost hrane te kvalitetu tjednog jelovnika u jednom dječjem vrtiću. Utvrđeno je da su postavljeni visoki higijenski standardi i da se oni poštuju. Provode se redovite analize zdravstvene ispravnosti toplih gotovih jela. Uzimaju se brisevi predmeta opće uporabe i kuhinjskog osoblja kako bi se mikrobiološki ispitali. Svi rezultati su u skladu s Pravilnikom. Broj obroka u vrtiću je skladu s Pravilnikom. Unos proteina i ugljikohidrata je povećan, dok je unos minerala i vitamina smanjen. U prehranu djece treba unijeti više mlijeka i mliječnih proizvoda, više lisnatog povrća i svježeg voća, više bijelog mesa i ribe te integralnih žitarica. Potrebno je pravilnije izbalansirati prehranu i u jutarnji topli obrok obvezno uvrstiti mlijeko i mliječne proizvode, a zajutrak treba sadržavati obroke s višom energetskom vrijednošću.

Abstract (english)

The aim of this study was to affirm a microbiological and health correctness of the food and also a quality of week menu in one kindergarten. It is determined that the regular health analysis of warm ready-cooked meal is done. The swabs of common use objects and kitchen staff are taken so they could be microbiologicly tested. Also, the number of meals in kindergarten met The Book of Regulation. The enter of proteins and carbohydrates is icreased, while the enter of minerals and vitamins is decreased. In children's diet must be more milk and milk products, more leafy fruits and vegetables, more ham, more white meat and fish, and also more integral cereals . That is why is necessary to balance diet properly. Also, milk and milk products must be in morning warm meal and breakfast must be a high energetic meal.
