Abstract

Kvaliteta meda znatno utječe na njegovu uporabu i važnost u prehrani. Kod utvrđivanja kvalitete meda potrebno je odrediti njegova fizikano-kemijska svojstva. Ona ovise o brojnim čimbenicima kao što su botaničko i geografsko porijeklo, klimatski uvjeti, način prerade, uvjeti i duljina skladištenja. U ovom radu određivan je maseni udio hidroksimetilfurfurala (HMF-a), udio prolina, aktivnost invertaze i dijastaze te specifičan kut rotacije na 33 uzorka meda od kadulje koji je prikupljen na području Republike Hrvatske. Pri tome su dobiveni sljedeći rezultati: maseni udio HMF-a se kretao između 0,8 mg/kg do 32,6 mg/kg, udio prolina od 181,5 mg/kg do 789,9 mg/kg, aktivnost invertaze od 1,3 IN do 9,2 IN, aktivnost dijastaze od 14,5 DN do 50,0 DN i specifični kut rotacije od -24 do -6. Devetnaest uzoraka ne zadovoljava dodatni kriterij IHC-a za aktivnost invertaze. Ostali uzorci zadovoljavaju Pravilnik o kakvoći meda i drugih pčelinjih proizvoda za maseni udio HMF-a i aktivnost dijastaze odnosno dodatni kriterij IHC-a za maseni udio prolina. Za specifični kut rotacije nema propisanih vrijednosti.

Abstract (english)

Honey quality has a great influence on honey consumpiton and it's importance in human nutrition. In evaluation of honey quality it is neccessary to determine physicochemical properties of honey. They depend on numerous factors such as botanical and geographical origin, climate, proccessing, conditions and time of storage. In this study, mass content of hydroxymethylfurfural (HMF), content of proline, invertase activity, diastase activity and specific optical rotation were determined in 33 samples of sage honey produced in Croatia. It was found that the mass content of HMF varied between 0,8 mg/kg and 32,6 mg/kg, content of proline from 181,5 mg/kg to 789,9 mg/kg, invertase activity between 1,3 IN and 9,2 IN, diastase activity from 14,5 DN to 50,0 DN and specific optical rotation from -24 to -6. Nineteen samples doesn׳t satisfy conditions given by IHC for invertase activity. All tested honey samples satisfy the conditions given by the Croatian regulations for HMF and diastase activity and additional criteria of IHC for proline. There are no regulations for specific optical rotation.
