Abstract

Kontrola kvalitete sirovog mlijeka vrlo je važna u pogledu zaštite zdravlja i sigurnosti potrošača. Mlijeko za izravnu potrošnju mora udovoljavati zakonski postavljenim kriterijima vezanim uz kemijski sastav, svojstva i higijensku ispravnost. Cilj ovog rada bio je ispitati kvalitetu svježeg sirovog mlijeka iz mljekomata kako bi se utvrdila sigurnost za konzumaciju te ispitati može li se uređaj Lactoscan-S60 koristiti kao brza i pouzdana zamjena za klasične metode. Dobiveni rezultati pokazali su moguću prisutnost antibiotika, povećani broj mikroorganizama u većini uzoraka mlijeka te neslaganje pojedinih rezultata dobivenih klasičnim metodama u odnosu na one dobivene na Lactoscan-u S60. Prema dobivenim podacima, sirovo mlijeko iz mljekomata ne odgovara postavljenim zakonskim kriterijima, a Lactoscan S60 se nije pokazao kao pouzdana alternativa za klasične metode analize mlijeka.

Abstract (english)

Quality control of raw milk is very important in terms of protecting the health and safety of consumers. Milk for direct consumption must comply with the statutory criteria relating to the chemical composition, properties and hygienic. The aim of this study was to examine the quality of the fresh raw milk from a vending machine in order to determine safety for consumption and to examine whether the device Lactoscan-S60 can be used as a fast and reliable replacement for the classical methods. The results showed the possible presence of antibiotics, an increasing number of microorganisms in most samples of milk and the disagreement of the individual results obtained by classical methods in relation to those obtained on Lactoscan S60. According to the obtained data, raw milk from a vending machine does not match the set of legal criteria, and Lactoscan S60 is not shown as a reliable alternative to the classical methods of analysis of the milk.
