Abstract
Mlijeko se smatra zlatnim standardom u dojenačkoj prehrani širom svijeta. Kravlje mlijeko se konzumira kao svježe ili u obliku prerađenih mliječnih proizvoda. Nutritivna kvaliteta i proizvodne mogućnosti kravljeg mlijeka usko su povezane s njegovom kemijskom strukturom. NMR-bazirana metabolomika predstavlja učinkovitu metodu za rutinsku kontrolu kvalitete i autentičnosti mliječnih proizvoda radi povećanja sigurnosti konzumacije. Koristi se i za određivanje mliječnog profila i dijagnostičkih biomarkera.
Abstract (english)
Milk is considered as the gold standard in infant nutrition worldwide. Cow's milk is consumed fresh and processed into variety of dairy products. The nutritional quality and processing capabilities of cow's milk is closely associated to its chemical structure. NMR- based metabolomics represents an effective method for routine control of quality and authenticity of dairy products in order to increase the safety of consumption. It is also used to determine the milk profil and diagnostic biomarkers.
