Abstract

Obzirom na bogat sadržaj polifenolnih spojeva, komina grožđa ima mogućnost primjene u brojnim industrijama kao prirodan izvor antioksidansa. Kako bi se izolirali polifenolni spojevi iz komine koriste se različite konvencionalne metode ekstrakcije koje se sve više zamjenjuju alternativnim načinima. Jedan od alternativnih pristupa je odabir tzv. zelenih otapala kao medija za ekstrakciju. Kao dobar izbor pokazala su se eutektična otapala koja su ekološki u potpunosti prihvatljiva i ne djeluju... More štetno na ljudsko zdravlje. U ovom radu ispitano je osam eutektičnih otapala kao mogućih za primjenu u ekstrakciji komine grožda, obzirom na ukupne polifenole i antocijane. Također, ispitana je i stabilnost tako pripremljenih ekstrakata kroz vrijeme i pri različitim temperaturama. Eutektična otapala pokazala su se učinkovitijima u ekstrakciji polifenolnih spojeva u odnosu na ekstrakciju etanolom i zakiseljenim etanolom, što ukazuje na mogućnost zamjene klasičnih organskih otapala eutektičnim otapalima u ekstrakciji polifenolnih spojeva iz komine grožđa i drugih biljnih materijala. Abstract (english)

Due to the rich content of polyphenols, grape pomace may be applied in many industries as a natural source of antioxidants. In order to isolate polyphenolic compounds from the pomace, various conventional extraction methods have increasingly been replaced by alternative methods. For this reason, it is good to apply alternative methods of extraction, where deep eutectic solvents have shown to be a good choice because they are ecologically entirely acceptable and do not adversely affect... More human health. One alternative approach is to select the green solvent as the extraction medium. This paper examined eight eutectic solvents as possible for use in the extraction of pomace of grapes, considering the total polyphenols and anthocyanins. Also, the stability has assessed both extracts prepared in time and at different temperatures. Deep eutectic solvents have proved to be more effective in the extraction of polyphenolic compounds compared to conventional extraction of ethanol and acidified ethanol, which indicates the possibility of potentially replacing conventional organic solvents with deep eutectic solvents in the extraction of polyphenols from grape pomace and other plant materials.
