Abstract

Funkcionalna hrana je ona koja sadrži bioaktivne sastojke za koje je znanstveno utvrđeno da imaju povoljno djelovanje na zdravlje ljudi. Cilj ovog rada je izrada on-line upitnika u „googledocs“-u pomoću kojeg će se na brz, jednostavan i jeftin način pratiti napredak u edukaciji i percepciji potrošača o funkcionalnim proizvodima. U upitniku je sudjelovalo 34 studenta iz Zagreba čiji su rezultati obrađeni i uspoređeni sa drugim istraživanjima. Rezultati su pokazali da je 85% ispitanika upoznato s pojmom funkcionalne hrane. Između više skupina funkcionalnih proizvoda, 48% ispitanika izjasnilo se da najviše kupuju voće i povrće. Redovita kupovina je u konstantnom porastu te su „okus“ i „odnos cijene i kvalitete“ ostali jedni od važnijih parametara. Supermarketi su ostali glavno mjesto kupnje funkcionalnih proizvoda. U cilju povećanja kupnje funkcionalnih proizvoda potrebne su edukacije o njihovim učincima, ali i razvoj tržišta kako bi se smanjilo nepovjerenje potrošača, a u toj edukaciji imaju nutricionisti ključnu ulogu.

Abstract (english)

Functional food contains bioactive ingredients that have been scientifically determined to have a beneficial effect on human health. The aim of this paper is to create an on-line questionnaire using "google docs" tools. Such on-line approach helps to track progress in educating and perceiving consumers about functional products in a fast, easy and inexpensive way. The questionnaire was attended by 34 students from Zagreb whose results were compared and compared with previous researches. The results showed that 85% of respondents were familiar with the concept of functional food. Between several functional product groups, 48% of respondents pleaded they mostly bought fruit and vegetables. Regular purchases are steadily increasing, and characteristics as "taste" and "cost and quality relationship" remain one of the most important parameters. Supermarkets are the main place to buy functional products. In order to increase the number of functional product purchase, educations on their effects and market development are needed to reduce consumer distrust, and nutritionists have a key role in this education.
