Abstract

Sastav i udio polifenola sirovog i jestivog repičinog ulja određen je HPLC metodom uz UV detekciju. Sirovo repičino ulje sadrži značajno više ukupnih polifenola od jestivog ulja. Najzastupljeniji polifenolni spoj sirovog ulja uljane repice je kanolol, derivat sinapinske kiseline, dok je fenilindan, spoj koji nastaje dimerizacijom kanolola, najzastupljeniji polifenolni spoj jestivog ulja uljane repice. Ta su dva spoja snažni antioksidansi i dok je za kanolol već dokazano protuupalno, antikancerogeno i antimutageno djelovanje, potencijal antioksidacijske aktivnosti fenilindana tek mora biti ispitan. Zato je nakon utvrđivanja sastava i udjela polifenola u repičinim uljima, cilj bio istražiti mogućnost izolacije ova dva najzastupljenija polifenola s izrazitom antioksidacijskom aktivnošću. Iz sirovog repičinog ulja izolirano je nešto više od trećine prisutnog kanolola, dok je iz jestivog repičinog ulja izolirana četvrtina teorijski prisutnog fenilindana.

Abstract (english)

The composition and content of polyphenols in crude and edible rapeseed oil was determined by HPLC with UV detection. Crude rapeseed oil contains significantly more total polyphenols than edible oil. The dominant polyphenolic compound of the crude rapeseed oil was canolol, derivate of sinapic acid, while phenylindane, dimere of canolol, was dominant polyphenolic compound of the edible rapeseed oil. These two compounds are powerful antioxidants and while the anti-inflammatory, anticarcinogenic and antimutagenic effects of canolol were already proven, the potential of the antioxidant activity of phenylindane has yet to be tested. Therefore, after determining the composition and content of polyphenols in rapeseed oils,, the aim was to explore the possibility of isolation of the two most common polyphenols with a marked antioxidant activity. It was isolated more than a third of the present canolol from crude rapeseed oil, while the quarter of theoretically present phenylindane was isolated from edible rapeseed oil.
