Abstract

Zadnjih nekoliko godina na tržištu je sve izraženija potražnja mlijeka i mliječnih proizvoda domaćih proizvođača. S druge strane, velike industrije često zbog veće ekonomske isplativosti mlijeko uvoze iz susjednih zemalja. Takav trend ne ispunjava potrebe tržišta niti pogoduje domaćim proizvođačima mlijeka, što je prepoznato i na državnoj razini te Ministarstvo poljoprivrede osigurava sredstva za sufinanciranje projekata mini mljekara. Želeći iskoristiti potencijal koji mini mljekara trenutno nudi, izrađen je Elaborat tehničko – tehnološkog rješenja pogona za preradu mlijeka u konzumno mlijeko i fermentirane mliječne proizvode. U Elaboratu je prikazan opis tehnoloških procesa prerade mlijeka te potrebni uređaji i oprema. Na osnovu projektnog zadatka odabrane su makrolokacija i mikrolokacija za izgradnju proizvodnog pogona. Uz proizvodne, objekt sadrži i neproizvodne prostorije u svrhu omogućavanja nesmetanog protoka ljudi, robe i materijala prema važećim zakonskim propisima. U sklopu Elaborata izrađen je i tlocrt glavnih i pomoćnih proizvodnih i neproizvodnih dijelova objekta.

Abstract (english)

For the last couple of years there has been more and more demand for homemade milk and dairy products from local producers. On the other side, large industries, for economic purposes, have been importing raw milk from other countries. That kind of trend doesn’t benefit local producers, nor does it satisfy consumer needs. The issue has been recognized by the government and the Ministry of Agriculture so they are co-financing mini dairy plants projects. An elaborate of technological solution for the production of consumer milk and fermented dairy products has been made in order to benefit from the potential that mini dairy plants offer. The study shows the necessary devices and equipment as well as the production process. Based on a project, micro location and macro location has been chosen to build the plant. Apart from the production line, the plant includes the necessary rooms to ensure a safe working environment based on legal requirements. A ground plan has been included in the study that shows the main and auxiliary parts of the production line.
