Obogaćivanje prirodnih sokova jabuke i naranče proteinima izoliranim iz industrijske konoplje

Abstract

Industrijska konoplja, Cannabis sativa L., jedna je od prvih kultiviranih biljnih vrsta koja se već tisućljećima koristi kao visoko vrijedna sirovina u tekstilnoj indstriji. S vremenom se fokus prebacio na nutritivno bogatstvo konoplje pa se tako ona počela sve više koristiti u medicinske, prehrambene i farmaceutske svrhe. Cilj ovog rada bio je obogatiti prirodno cjeđene sokove jabuke i naranče proteinima izoliranim iz industrijske konoplje kako bi se na taj način povećala njihova nutritivna vrijednost. U radu su se izravnim metodama pratile promjene električne vodljivosti, ukupno otopljenih čvrstih tvari, pH i boje u ovisnosti o volumnom udjelu pojedinog soka te o količini dodanih proteina. Istraživanja su se provodila na uzorcima filtriranih i nefiltriranih sokova. Osim izravnog mjerenje navedenih fizikalnih svojstava, korištena je i blisko-infracrvena (NIR) spektroskopija. Za obradu podataka dobivenih NIR spektroskopijom, korištena je analiza glavnih komponenti (PCA analiza). Na temelju PCA analize, upotrebom umjetnih neuronskih mreža predviđao se volumni udio sokova, količina dodanih proteina te spomenuta fizikalna svojstva u uzorcima. Rezultati dobiveni korištenjem PCA analize i umjetnih neuronskih mreža, pokazali su se pouzdaniji od ranije spomenutih izravnih metoda kod svih uzoraka. Na svim uzrocima provedena je i senzorska analiza kojom su ispitivana organoleptička svojstva sokova. Kao najprihvaćeniji uzorak pokazao se onaj bez dodatka proteina konoplje u kojemu je izmješanost sokova naranča:jabuka bio 75:25.

Abstract (english)

Industrial hemp, Cannabis sativa L., is one of the first cultivated plant species that has been used for many centuries as a high-value raw material in textile industry. Over time, the focus shifted to the nutritional richness of hemp so it became increasingly used for medical, nutritional and pharmaceutical purposes. The aim of this paper was to enrich the naturally squeezed apple and orange juice with proteins isolated from industrial hemp in order to increase their nutritional value. Depending on the volume of the individual juice and the amount of added protein, changes in electrical conductivity, total dissolved solids, pH and color were monitored directly. Studies were carried out on samples of filtered and unfiltered juices. Except direct measurement of those physical properties, near-infrared (NIR) spectroscopy was also used. The main component analysis (PCA analysis) was used for processing data obtained by NIR spectroscopy. Based on the PCA analysis, artificial neural networks were used to predicted the volume of juices, the amount of added protein and the physical properties mentioned in the samples. Results obtained using PCA analysis and artificial neural networks have been shown to be more reliable than mentioned direct method in all samples. Sensory analysis of organoleptic properties of juices was also performed on all samples. The most preferred sample was the one without the addition of hemp proteins in which orange:apple ratio was 75:25.
