Abstract

U poljoprivrednoj i prehrambenoj industriji nastaje velika količina biljnih nusproizvoda koji se mogu iskoristiti za proizvodnju različitih vrijednih proizvoda. Jedan od tih proizvoda su i proteinski hidrolizati koji imaju primjenu u prehrambenoj, farmaceutskoj i kozmetičkoj industriji te biotehnologiji. Često se kao sirovine za proizvodnju proteinskih hidrolizata koriste sjemenke uljarica i njihovi derivati u koje spadaju i uljne pogače. Ovaj diplomski rad donosi pregled dosadašnjih spoznaja o različitim biljnim proteinskim hidrolizatima, strategijama njihove priprave i biološkom djelovanju. Poseban naglasak je stavljen na primjenu biljnih proteinskih hidrolizata u tehnologiji životinjskih stanica gdje se koriste kao dodatak hranjivom mediju za uzgoj stanica i predstavljaju potencijalnu zamjenu za serum.

Abstract (english)

The agricultural and food industries generate a large amount of by-products of plant origin that can be used for producton of other valuable products. Such products are protein hydrolysates that can be used in the food, pharmaceutical and cosmetic industry and biotechnology. The most common raw materials for the production of protein hydrolysates are oil-plant seeds or their derivates called oil cakes. This thesis provides an overview of known facts about various plant protein hydrolysates, their preparation strategies and biological activity, focusing on the application of plant protein hydrolysates in animal cell technology where they are used as nutritional supplement of cell culture medium and can potentialy replace serum.
