Abstract

Brojne analize pokazale su da su najveći faktori rizika kod trovanja hranom povezani sa ljudskom pogreškom, neznanjem ili nemarom radnika koji posluju s hranom. Cilj ovog rada je procjena ozračja i znanja o sigurnosti hrane djelatnika odabranih supermarketa u gradu Zagrebu putem, za tu svrhu, prilagođenih modificiranih anketnih upitnika iz postojeće literature. Anketiranje djelatnika je provedeno u 3 objekta u okviru dva lanca supermarketa i obuhvatilo je ukupno 59 ispitanika različitih demografskih karakteristika. Prosječna razina znanja o sigurnosti hrane djelatnika odabranih supermarketa u gradu Zagrebu od 64,3 % točnih odgovora viša je od prosječne razine znanja u studentskim restoranima u gradu Zagrebu od 52,74 %, a gotovo istovjetna razini znanja zaposlenika u ugostiteljskim objektima u Republici Hrvatskoj od 65 %. Općenito, ispitanici su vrlo pozitivno ocijenili ozračje s manjim iznimkama vezano za čišćenje opreme. Kako bi se podigla svijest o važnosti primjene higijenskih mjera i mitigaciji rizika vezanih za sigurnost hrane, neophodno je redovito i ciljano provođenje edukacija djelatnika i jačanje pozitivnog ozračja.

Abstract (english)

Numerous analyzes have shown that the highest risk factors for food poisoning are related to human error, lack of knowledge or negligence of employees handling food. The aim of this paper is to assess the climate and food safety knowledge of employees of the selected supermarkets in the City of Zagreb through adapted questionnaires. The employee survey was conducted in 3 facilities within two supermarket chains and included a total of 59 respondents of different demographic characteristics. The average level of knowledge about food safety of employees of selected supermarkets in the city of Zagreb of 64.3 % correct answers is higher than the average level of knowledge in student restaurants in the city of Zagreb of 52.74 % and almost identical to the level of knowledge of 65 % of employees in restaurants in Croatia. In general, respondents rated the climate very positively with minor exceptions related to equipment cleaning. In order to raise awareness of the importance of applying hygienic measures and mitigating the risks associated with food safety, it is necessary to conduct regular and targeted training of employees and strengthen the positive climate.
