Abstract | Cilj ovog istraživanja bio je odrediti kemijski sastav 24 uzoraka kestena iz okolice Karlovca te dobivene rezultate usporediti s rezultatima drugih istraživanja. Određen je osnovni kemijski sastav: udio vode, udio pepela, udio proteina, udio prirodnog inverta, udio saharoze, udio škroba te udio masti. Analizom kemijskog sastava dobiveni su sljedeći rezultati: udio vode u ispitivanim uzorcima kestena nalazi se u rasponu od 42,89 % do 57,75 %, udio pepela je od 0,80 % do 1,83 %, udio ukupnih proteina se nalazi u rasponu od 2,65 % do 6,41 %, udio prirodnog inverta je u rasponu od 0,83 % do 3,02 %, udio saharoze je od 2,97 % do 18,04 %, udio škroba je u rasponu od 26,22 % do 32,70 % te udio masti iznosi od 0,80 % do 1,86 %. |
Abstract (english) | The aim of this study was to determine the chemical composition of 24 chestnut samples from Karlovac area and to compare the obtained results with the results of other studies. The basic chemical composition was determined: water content, ash content, protein content, natural invert content, sucrose content, starch content and fat content. The analysis of the chemical composition gave the following results: the water content in the tested chestnut samples ranges from 42,89 % to 57,75 %, the ash content is from 0,80 % to 1,83 %, the total protein content is in the range from 2,65 % to 6,41 %, the natural invert content is in the range of 0,83 % to 3,02 %, the sucrose content is from 2,97 % to 18,04 %, the starch content ranges from 26,22 % to 32,70 % and the fat content ranges from 0,80 % to 1,86 %. |
