Abstract

Meso i proizvodi od mesa važan su dio pravilne i uravnotežene prehrane. Postoje različite vrste mesa, a time i mesnih proizvoda, a u posljednje vrijeme na tržištu se također pojavljuju vrste mesa koje svojim karakteristikama odgovaraju „dijetetskom“ mesu i mesu s pridjevom „funkcionalno“, time se sve veća važnost pridaje konjskom mesu, zečjem te mesu razne divljači. Meso je namirnica bogata proteinima visoke biološke vrijednosti, brojnim vitaminima i mineralima. Crveno meso poput svinjetine, govedine i janjetine, a također i procesirano meso trebalo bi ograničeno konzumirati jer je povećana konzumacija povezana s određenim bolestima kao što su kardiovaskularne bolesti, rak i pretilost.

Abstract (english)

Meat and meat products play an important role in proper nutrition and balanced diet. There are various types of meat, as well as meat products. Recent appearances on the market include dietary meat and functional meat products, resulting in the growing significance attached to horse meat, rabbit and game. Meat is food rich in high biological value proteins, together with numerous vitamins and minerals. However, for red meat such as pork, beef and lamb, as well as processed meat, limited consumption is recommended due to the correlation between increased consumption and certain diseases such as cardiovascular diseases, cancer and obesity.
