Abstract

Kora mandarine, nusproizvod nastao tijekom obrade ploda mandarine, često se baca te se ne iskorištava njezin prehrambeno - biotehnološki potencijal. Ekstrakcijom kore i njezinom ugradnjom u strukturu biofilma nudi se ne samo mogućnost zbrinjavanja otpada, već i poboljšanje svojstava biofilmova te njihove daljnje primjene. U ovom radu analiziran je utjecaj dodatka ekstrakata kore mandarine na sastav biofilmova na bazi alginata. Dobiveni rezultati su pokazali da biofilmovi s ekstraktom kore mandarine posjeduju različita fizikalna i kemijska svojstva (vlaga, topljivost, kapacitet vezanja ulja, boja i ukupni fenoli) u usporedbi s onima bez dodatka ekstrakta. Tako je dodatak vodenog ekstrakta s enzimima imao izrazit učinak na promjenu boje i povećanje kapaciteta vezanja ulja. S druge strane, uzorci s dodatkom puferskog ekstrakta s enzimima pokazali su nagli pad topljivosti. Time je potvrđeno da primjenom različitih ekstrakta kore mandarine dolazi do promjena u strukturi i stabilnosti biofilma, pa njihovim prikladnim odabirom moguće je utjecati i na odgovarajuća, poželjna fizikalno - kemijska svojstva biofilmova.

Abstract (english)

The peel of mandarins, a by-product of mandarin fruit processing, is often ignored and its food biotechnology potential is not fully exploited. The extraction of the ingredients from the peel and their incorporation into the biofilm structure offer an op portunity to reduce waste while improving the properties of biofilms and thus expand ing their potential applications. In this work, the influence of the addition of mandarin peel extracts on the composition of alginate-based biofilms was investigated. The results show that mandarin peel extract influences the physical and chemical properties of biofilms (moisture, solubility, oil binding capacity, color and total phenols). In this context, the addition of aqueous enzyme extract had a pronounced effect on the color change and an increase in oil binding capacity. On the other hand, the samples with the buffered enzyme extract showed a strong decrease in solubility. It was thus confirmed that the use of different mandarin peel extracts results in changes in the structure and stability of biofilms, so that the desired physical and chemical properties in particular can be influenced by their suitable selection.
