Abstract

Eko-nutricionizam je nova znanost koja povezuje ekologiju i nutricionizam s ciljem da poboljša kvalitetu hrane i smanji njen negativan utjecaj na okoliš. Između različitih aspekata s kojim se susreće ova znanost, tzv.” Gubitak hrane” jedna je od temeljnih činjenica s kojoj se bavi. Gubitak hrane koji opisuje hranu koja se baca a još je uvijek adekvatna za upotrebu dio je svakog koraka u hranidbenom lancu od proizvodnje hrane do njene konzumacije. Ovaj rad zapravo stavlja u svoj fokus gubitak hrane tijekom konzumacije, na način da je ta hrana pojedena u suvišku. Takav način prehrane jedan je od glavnih uzroka pretilosti, a samim time povećava rizik od različitih kroničnih bolesti. S ovakvog stajališta, glavni cilj ovog rada bio je da se hrana koja je pojedena u suvišku, a uzročnik je prekomjerne tjelesne mase i pretilosti može karakterizirati kao “Metabolic Food Waste (MFW)”, odnosno gubitak hrane kroz metabolizam. Rezultati ove studije pokazali su koje pojedine FAO regije i zemlje imaju najviši MFW, uzimajući kao subjekte cjelokupnu populaciju s prekomjernom tjelesnom masom i pretilu te podijeljenu po spolu. Rezultati ovog rada su htjeli naglasili važnost smanjenja MFW-a te posljedično i utjecaja na prirodne resurse i brigu o zdravlju.

Abstract (english)

Econutrition is a new science linking ecology and nutrition, and focus on the development of conditions improving food quality and reducing the costs for the environment. Between the different aspects of eco-nutrition, food waste is one of the most crucial. Today, food waste is detected in the entire food supply chain from production to human consumption. In this Thesis we will be focused on food waste detected on a stage of human consumption in a way that increasing in consumption and overfeeding are one of main factors which causes obesity which is a major risk factor for degenerative disease and is related to excess body fat. From this view, and also the main goal of the Thesis is to show that food eaten above physiological needs, manifesting as overweight and obesity, should also be considered food waste, i.e., Metabolic Food Waste (MFW), with an ecological cost in addition to its health cost. The results of this study showed which FAO world regions and single countries had the highest values of metabolic food waste, when the entire population is included and when are divided by overweight and obese men and women. The finding of the Thesis highlighted the importance of reducing MFW in order to reduce environmental and health care costs.
