Abstract

Zbog visokog sadržaja fenolnih spojeva grožđe kao i komina koja zaostaje nakon proizvodnje vina je visoko vrijedna sirovina. Danas se sve više istražuju nove tehnike ekstrakcije fenolnih spojeva iz komine kako se ne bi tretirala kao otpad već kao nusprodukt koji možemo iskoristiti za izolaciju biološki aktivnih spojeva. Jedna od najnovijih tehnika ekstrakcije je tretman s hladnom plazmom. Cilj ovog rada bio je ispitati utjecaj polarnosti otapala (10, 30 i 50 %), frekvencija (60 i 120 Hz) i vremena ekstrakcije (5 i 10 minuta) na izolaciju flavonoida iz liofilizirane pokožice komine grožđa. Najbolja ekstrakcija ostvarena je uz primjenu 50 % vodene otopine etanola, dok vrijeme i frkvencija nisu značajnije utjecali na izolaciju ovih spojeva.

Abstract (english)

Vine culture is widespread around the world with the longest tradition and history, the great social, economic and environmental importance. Due to its high content of phenolic compounds is highly valuable raw material also grape stalks and marc that is remaining after wine production. Today, increasingly exploring new techniques of extraction of phenolic compounds from the grape skins that were not treated as waste but as a by-product that can be used for isolation of biologically active compounds. One of the latest techniques of extraction is the treatment with cold plasma whose parameters extraction (duration, frequency and polarity solvents) monitored in this study on a sample of freeze-dried the skins of grapes. The results of this work confirmed that the more polar solvent ethanol extracted a higher amount of flavonoids, as far as the parameters of the duration and frequency of the extraction is needed further research to determine which of these parameters affect to extraction of flavonoids.
