Abstract

Aspartam je umjetno sladilo koje se koristi umjesto saharoze. Njegova kalorijska vrijednost iznosi 4 kcal/g, no u upotrebi može se primjenjivati u 200 puta manjoj količini u odnosu na šećer zahvaljujući njegovoj intenzivnoj slatkoći. Strukturno je sastavljen je od L-fenilalanin metil estera i L-asparaginske kiseline. Metabolizira se u gastrointestinalnom traktu na 3 komponente – aspartat, fenilalanin i metanol. Zbog moguće toksičnosti ovih metabolita, postoje pretpostavke o potencijalnoj štetnosti aspartama. Provedena su mnoga istraživanja na ljudskim i životinjskim modelima, a u ovom radu dan je pregled dosadašnjih saznanja o biotransformacijama i toksičnosti aspartama. Na temelju rezultata o povezanosti upotrebe aspartama s alergijama, glavoboljama, epileptičnim napadajima, fenilketonurijom, učincima na endokrini sustav i kancerogenezu, zaključuje se da ne postoje čvrsti dokazi o štetnosti aspartama za ljudsko zdravlje.

Abstract (english)

Aspartame is an artificial sweetener used instead of saccharose. Its caloric value is 4 kcal/g, but it can be added in an amount which is 200 times less than the amount of sugar, thanks to its intensive sweetness. Aspartame is composed of L-phenylalanine methyl ester and L- aspartic acid. It is metabolized in the gastrointestinal tract in 3 components – aspartic acid, phenylalanine and methanol. Because of the possible toxicity of this 3 components there are many assumptions about the potential harmfulness of aspartame. Many studies have been conducted on human and animal models, and this is a review on the previous knowledge about biotransformations and aspartame toxicity. Based on the results of the correlation of aspartame with allergies, epileptic seizures, phenylketonuria, effects on the endocrine system and with cancerogenesis, it can be concluded that there are no firm evidence about the harmfulness of aspartame on the human health.
