Abstract

U ovom radu je opisana i uspoređena uspješnost ekstrakcije β – glukana iz ječmenih i zobenih posija konvencionalne metode mehaničkom ekstrakcijom i ekstrakcijom pomoću ultrazvuka. Tijekom ekstrakcije ultrazvukom visokog intenziteta mijenjani su parametri ekstrakcije (vrijeme, temperatura, amplituda) kako bi se utvrdilo kako ti parametri utječu na uspješnost ekstrakcije. Dobiveni rezultati su pokazali da na uspješnost ekstrakcije β – glukana iz zobenih posija imaju značajan utjecaj temperatura, dok kod ekstrakcije β – glukana iz ječmenih posija značajan utjecaj imaju temperatura ekstrakcije na kvadrat i amplituda ekstrakcije korištenog ultrazvuka na kvadrat. Iz ovih rezultata izvedene su jednadžbe ovisnosti količine ekstrahiranog β – glukana o zadanim parametrima. Istraživanje je rezultiralo matematičkim modelom koji opisuje utjecaj uvjeta ultrazvučne ekstrakcije na uspješnost ekstrakcije β – glukana. Rezultati su pokazali da i kod ječmenih i zobenih posija uspješnost ekstrakcije se povećava promjenom odgovarajućih uvjeta ultrazvučnog tretmana u odnosu na konvencionalnu ekstrakciju. To se posebno odnosi na ječmene posije.

Abstract (english)

β- glucan ultra sound extraction from oat and barley bran is described and compared with the conventional mechanical extraction. During ultra sound extraction the extraction parameters (temperature, time, amplitude) were changed in addition to determent which of these parameters has the biggest influence on extraction efficiency. The given results showed that the biggest influence on β – glukan extraction from oat have the temperature and time, while on β – glukan extraction from barley the biggest influence have temperature and amplitude. This research led to mathematical equations which describe the influence of the ultra sound conditions on extraction efficiency of β – glucan. The results have also shown that the extraction efficiency is increased with the change of ultra sound parameters in addition to mechanical extraction. This is true especially for barley bran.
