Abstract

U ovom radu je opisana tehnologija proizvodnje voćnih sokova i nektara iz sljedećih sirovina: jagoda, brusnica, borovnica, višnja, malina, kupina, jabuka, marelica, kruška i aronija. Kvaliteta gotovog proizvoda uvelike ovisi o kvaliteti sirovine, na što značajno utječe pravovremena berba. Utjecaj na proizvod također ima i način prerade sirovine te tehnološki postupak proizvodnje. U tu svrhu je izrađen idejni tehnološki projekt u kojem je opisan suvremeni način proizvodnje sokova i nektara. Na temelju projektnog zadatka su odabrane makrolokacija i mikrolokacija za izgradnju pogona i pratećih objekata. Glavna zgrada je konstruirana na temelju građevinskih i arhitektonskih zahtjeva te zahtjeva struke, dok su ostali objekti na čestici raspoređeni na način da omoguće nesmetan promet ljudi, vozila i materijala.

Abstract (english)

This work describes production technology of fruit juices and nectars from following raw materials: strawberry, cranberry, blueberry, sour cherry, raspberry, blackberry, apple, apricot, pear andaronia. The quality ofthe finished product dependson the quality of raw materials which is greatly affected by the timely harvest. Way of processing raw materials and technological process also has impact on the product. For this purpose, preliminary technological project is designed, in which the modern way of producing juices and nectars is described. On the basis of project assignment macrolocation and microlocation for the construction of the plant and auxiliary facilties were chosen. The main building is constructed on the basis of building and architectural requirements and demands of the profession, while other buildings on parcel are arranged in a way to enable unimpeded movement of people, vehicles and materials.
