Abstract

Bioprocesi se mogu podijeliti u dvije velike skupine: submerzni uzgoj (SLF) i uzgoj na čvrstim
supstratima (eng. solid state fermentation, SSF). Za razliku od submerznog uzgoja, kod SSF nema slobodno
tekuće vode. Tradicionalni oblici SSF-procesa prakticiraju se još od davnina za dobivanje fermentirane
hrane i pića. Primjena SSF poprilično je ograničena, a razvoj suvremene biotehnologije do sada je bio
usmjeren uglavnom na submerzne procese koji su se pokazali pogodnijima za većinu proizvoda. Međutim,
u određenim okolnostima i za određene proizvode, SSF je svakako prikladna, a ponekad i bolja opcija. U
ovom završnom radu dan je teorijski pregled uzgoja na čvrstim supstratima, pojašnjeni su fizikalni
čimbenici (vlaga, temperatura, pH-vrijednost, sastav plinovite faze, koncentracije supstrata i produkata) koji
utječu na rast mikroorganizama u SSF-procesu. Prikazani su tipovi SSF-bioreaktora i navedene su
mogućnosti mjerenja i kontrole procesnih parametara. Dan je i kratak pregled matematičkih modela SSF i
izolacije proizvoda.

Abstract (english)

Bioprocesses can be divided into two major groups: submerged fermentation (SLF) and solid
state fermentation (SSF). Unlike submerged culture, in SSF there is no free liquid water. Traditional
forms of SSF process have been used from ancient times to obtain fermented foods and beverages. The
application of SSF is quite limited and the development of modern biotechnology has so far focused
mainly on submerged processes that have proven to be more appropriate for most products. However, in
certain circumstances and for certain products, SSF is certainly appropriate, and sometimes a better
option. This final work gave a theoretical overview of cultivation on solid substrates, clarified the
physical factors (humidity, temperature, pH, gas phase composition, substrate and product concentrations)
that affect the growth of microorganisms in SSF. Types of SSF bioreactors were shown, as well as
options of measurement and control. A brief overview of mathematical modelling and product recovery
is also given.
