Abstract | Cilj ovog rada bio je odrediti kvalitetu sjemena gorušice i sastav masnih kiselina u ulju sjemenki gorušice. Za analizu smo koristili 4 uzorka bijele i 4 uzorka smeđe gorušice, uzgojene na eksperimentalnom polju Agronomskog fakulteta u Zagrebu. Udio vode se kretao između 6,4% i 6,5% u uzorcima bijele gorušice te između 6,2% i 6,4% u uzorcima smeđe gorušice. Udio ulja je bio veći u uzorcima smeđe gorušice i kretao se od 30,9% do 34,0% dok se u uzorcima bijele gorušice kretao od 25,1% do 25,4%. Pokazalo se da uzorci bijele gorušice imaju veći udio eruka (35,6%- 40,0%) i oleinske masne kiseline (20,9%-21,4%) za razliku od uzoraka smeđe gorušice u kojima se udio kretao od 22,2% do 22,6% za eruka odnosno od 18,8% do 19,4% za oleinsku masnu kiselinu. Udio esencijalne alfa linolenske (ω-3) masne kiseline je bio veći u uzorcima bijele gorušice (10,4%-15,0%) za razliku od smeđe gorušice koja je imala veći udio linolne (ω-6) masne kiseline (22,4%-23,2%). |
Abstract (english) | The aim of this study was to determine the quality of a mustard seed and the composition of fatty acids present in the oil of mustard seeds. For this analysis we used the 4 samples of white and 4 samples of brown mustard grown in the experimental field of the Faculty of Agriculture in Zagreb. The water content was between 6,4% and 6,5% in samples of white mustard and between 6,2% and 6,4% in samples of brown mustard. The share of oil was slightly higher in samples of brown mustard and ranged from 30,9% to 34,0% while in samples of white mustard ranged from 25,1% to 25,4%. It was shown that the samples of white mustard have a higher level of erucic (35,6% - 40,0%) and oleic fatty acid (20,9% -21,4%) in contrast to brown mustard samples in which the proportion ranged from 22,2 % to 22,6% for erucic or from 18,8% to 19,4% of oleic fatty acid. The share of essential alpha-linolenic (ω-3) fatty acid was higher in samples of white mustard (10,4% -15,0%) in contrast to the brown mustard that had a higher proportion of linoleic fatty (ω-6) acid (22,4% -23,2%). |
