Abstract

Imunoenzimska ELISA (engl. Enzyme-Linked ImmunoSorbent Assay) metoda jednostavna je i brza metoda kojom se određuje prisutnost i količina antigena. Budući da se radi o vrlo specifičnoj reakciji antigen-antitijelo, u ovome radu korištena je u cilju određivanja alergena mlijeka u osam uzoraka keksa i čajnih peciva, od čega u četiri uzorka iz trgovačkih lanaca te četiri uzorka iz pekarnica sa zagrebačkog područja. U uzorcima keksa i čajnih peciva iz trgovačkih lanaca nisu detektirani alergeni mlijeka, dok se udio alergena mlijeka određen u tri od četiri analizirana uzorka iz pekarnica kretao u rasponu od 0,24 mgkg⁻¹ do 0,32 mgkg⁻¹. Rezultati imunoenzimskih analiza također su uspoređeni s informacijama o hrani naznačenim na analiziranim proizvodima. Uočeno je kako dva uzorka keksa i čajnih peciva iz trgovačkih lanaca u okviru informacija o hrani sadrže navod "može sadržavati" vezan uz prisutnost alergena mlijeka, iako alergeni mlijeka imunoenzimskim analizama nisu detektirani, dok jedan od uzoraka iz pekarnica u kojem su detektirani alergeni mlijeka ne sadrži navod o prisutnosti alergena mlijeka.

Abstract (english)

Immunoenzyme ELISA method (Enzyme-Linked ImmunoSorbent Assay) is a simple and rapid method for detecting and quantitating antigens. Since there is highly specific antigen-antibody reaction, in this study it is used for detecting and quantitating milk allergens in eight samples of biscuits and tea biscuits, four samples from supermarkets and four samples from bakeries on Zagreb market. In samples of biscuits and tea biscuits from supermarkets, milk allergens were not detected, while milk allergens were determined in three of four samples from bakeries in the range from 0,24 mgkg⁻¹ to 0,32 mgkg⁻¹. The results of immunoenzyme analysis were compared with food labels that were provided on products used in this research. It was noticed that two samples of biscuits and tea biscuits from supermarkets have statement „may contain traces of milk products“ on their food labels, but milk allergens were not detected with immunoezyme analysis, while one of the samples from bakeries in which milk allergens were detected didn't provide any information of the presence of milk allergens.
