Abstract | Orah (Juglans regia L.) je biljka koja pripada skupini orašastih plodova, a radi svog kemijskog sastava ističe se kao namirnica koja povoljno utječe na zdravlje ljudi. U ovom radu sakupljeno je 12 različitih uzoraka oraha, različitih sorti iz različitih podneblja, te je određivan njihov kemijski sastav prema standardnim metodama. Svakom uzorku određen je udio vode, pepela, masti i proteina, a udio ugljikohidrata dobiven je iz razlike. Udio vode iznosio je 2,85- 3,34%, udio pepela 1,31-2,25%, udio proteina 16,27-21,36%, udio masti 64,09-72,61% te udio ukupnih ugljikohidrata 3,08-13,66%. Rezultati su uspoređeni s podacima iz tablica prehrambenih vrijednosti te podacima iz različitih znanstvenih radova. |
Abstract (english) | Walnut (Juglans regia L.) is a plant that belongs to the group of nuts, and because of its chemical composition it is considered to have very good impacts on human health. For the purposes of this study, 12 different samples of walnuts, of different sorts from different climates, were collected in order to determine its chemical composition using the standard methods. The amount of water, ash, total fat and proteins was determined in each sample and total carbohydrates were determined by the difference. The results showed that the range of water content was from 2,85 to 3,34%, ash content from 1,31 to 2,25%, protein content from 16,27 to 21,36%, fat content from 64,09 to 72,61% and total carbohydrates content from 3,08 to 13,66%. The results of the analysis were then compared with the official nutritional value data and data collected from various scientific researches. |
