Abstract

Budući da se posljednjih godina promiče trend zdrave prehrane, koji uključuje konzumaciju povrća, javlja se i potreba za dostupnosti povrća tijekom cijele godine. Povrće je sezonska namirnica, pa su se u svrhu njegovog konzerviranja razvili mnogi postupci prerade. Zamrzavanje je jedan od najboljih načina konzerviranja jer, osim što čuva prvobitnu kvalitetu, čuva i nutritivnu vrijednost povrća. U Republici Hrvatskoj je proizvodnja povrća mala te se i dalje više povrća uvozi nego izvozi, bilo svježeg ili prerađenog. Sukladno tome ovim je radom izrađen Elaborat tehničko-tehnološkog rješenja pogona za smrzavanje povrća u kojem su opisani tehnološki postupci prerade brokule, cvjetače, graška, mrkve i krumpira. U Elaboratu su prikazani potrebni uređaji i oprema te su odabrane makrolokacija i mikrolokacija za izgradnju proizvodnih i neproizvodnih prostora koji su prikazani u tlocrtu.

Abstract (english)

As the trend of healthy nutrition, which includes the consumption of vegetables, has been promoting over the last few years, there is a need for vegetables aviability througout the year. Vegetables are seasonal foodstuff, so many ways of preservation have been developed for the purpose of conservation. Freezing is one of the best ways of conserving because, besides preservig the original qualitiy, it preserves the nutritional value of the vegetables. In the Republic of Croatia the production of vegetables is small and continues to grow in imports rather than exports, whether fresh or processed. Accordingly, this work has created the Elaborate of technical and tehnological solution for the frozen vegetables plant, describing the technological processes of broccoli, cauliflower, peas, carrots and potatoes. In the Elaborate is displayed the reqiured equipment, macrolocation and microlocation are selected and used to construct the productive and non-productive areas shown in the ground plan.
