Abstract

Cilj ovog istraživanja bio je testovima sklonosti (testom prihvaćanja uz primjenu 9-bodovne hedonističke skale te testom preferencije) procijeniti sklonost potrošača (N = 70) prema uzorcima meda nabavljenim direktno od proizvođača te uzorcima meda nabavljenim u trgovačkim lancima, također senzorski analizirati uzorke meda procjenom od strane senzorskih analitičara (N = 5) te usporediti dobivene rezultate za različite vrste meda (medljikovac, bagrem, lipa, cvjetni i kadulja). Rezultati procjene sklonosti potrošača (N = 70), dobiveni pomoću dvaju testova sklonosti, pokazuju kako su med kadulje iz trgovačkog lanca (K-T) i med medljikovac iz trgovačkog lanca (M-T), koji su postigli najviše stupnjeve sviđanja, ujedno i više preferirani od strane potrošača u odnosu na iste vrste uzoraka nabavljene direktno od proizvođača. Također, cvjetni med nabavljen iz trgovačkih lanaca (C-T) više je preferiran od strane potrošača u odnosu na cvjetni med nabavljen direktno od proizvođača (C-P), a koji je od strane potrošača postigao najniže stupnjeve sviđanja. Senzorski analitičari u slučaju uzoraka meda nabavljenih u trgovačkim lancima ističu samo med bagrema (B-T), te za razliku od potrošača najviše ocjene za većinu senzorskih svojstava dodjeljuju uzorcima meda nabavljenim direktno od proizvođača i to u slučaju meda medljikovca (M-P) i meda lipe (L-P).

Abstract (english)

The aim of this study was to assess the preference of consumers (N = 70) for honey samples collected directly from producers and honey samples collected in retail chains by affective tests (acceptance test using 9-point hedonistic scale and preference test), as well as sensory analysis of honey samples by expert sensory evaluators (N = 5) and compare the results obtained for different types of honey (honeydew, acacia, linden, flower and sage). The results of the consumer preference assessment (N = 70), obtained using two preference tests, show that sage honey from the retail chain (KT) and honeydew honey from the retail chain (MT), which achieved the highest levels of likes, are also more preferred by consumers in relation to the same types of samples collected directly from the manufacturer. Also, flower honey collected from retail chains (C-T) is more preferred by consumers over flower honey collected directly from producers (C-P), which has achieved the lowest levels of likes by consumers. In the case of honey samples collected in retail chains, sensory experts point out only acacia honey (B-T), and unlike consumers, the highest marks for most sensory properties are given to honey samples collected directly from producers in the case of honeydew honey (M-P) and linden honey (L-P).
