Abstract

Imunoenzimske ELISA metode (engl. Enzyme-Linked Immunosorbent Assay; ELISA) su vrlo raširene imunološke, odnosno imunokemijske metode koje, obzirom na visoku osjetljivost i selektivnost, u analitici uzoraka hrane omogućuju određivanje vrlo niskih koncentracija ciljanih analita. Prema dostupnoj znanstvenoj literaturi, svoju primjenu u analitici hrane pronalaze u određivanju potencijalnih alergena, različitih kontaminanata i rezidua, a brojne su prednosti uporabe ELISA metoda u procjeni autentičnosti prehrambenih proizvoda. Usprkos određenim nedostacima, zbog svojih prednosti u odnosu na druge analitičke tehnike i metode, mogu pružiti koristan alat u svrhu kontrole kvalitete i sigurnosti hrane.

Abstract (english)

Immunenzyme ELISA methods (engl. Enzyme-Linked Immunosorbent Assay, ELISA) are often used immunological, respectively and immunochemical methods which, due to their high sensitivity and selectivity, enable the determination of very low concentrations of target analytes in the analyses of food samples. According to the available scientific literature, they find their application in food analyses in the determination of potential allergens, various contaminants and residues, and there are numerous advantages of ELISA methods applications in assessing the authenticity of food products. Despite certain disadvantages, due to their advantages over other analytical techniques and methods, they can provide an valuable tool for the purpose of food quality and safety control.
