Abstract

Svake godine u svijetu se proizvede velika količina nusproizvoda prehrambene i poljoprivredne industrije, od čega većina završi kao otpad čime se zagađuje okoliš. Dokazano je da taj biootpad može poslužiti za ekstrakciju vrijednih bioaktivnih spojeva. Cilj rada je opisati bioaktivne tvari u kori cikle i banane. U kori cikle se nalaze betalaini (betacijani i betaksantini), fenolni spojevi, vitamini, betalaminska kiselina, ferulinska kiselina, p-kumarinska kiselina i L-triptofan. U kori banane nalaze se antocijani, tokoferoli, askorbinska kiselina, fitosteroli, dopamin, tanini i drugi fenolni spojevi. Opisane su konvencionalne i nove tehnike ekstrakcije bioaktivnih tvari iz biljnih tkiva. Učinak tih tvari na ljudske stanice je često antioksidacijski, protuupalni, antimutageni i antitumorski, te one pospješuju zdravlje i štite organizam od bolesti. Uvidom u korisne komponente koje se dobivaju iz kora cikle i banane daljnji razvoj metoda njihove ekstrakcije te iskorištavanje biootpada ima važnu ulogu.

Abstract (english)

Every year, the world produces a large amount of by-products from the food and agricultural industries, most of which end up as waste, polluting the environment. This biowaste can be used for the extraction of valuable bioactive compounds. The aim of this paper is to describe the bioactive substances in the peel of beets and bananas. Beetroot peel contains betalains, phenolic compounds, vitamins, betalamic acid, ferulic acid and p-coumaric acid. Banana peel contains anthocyanins, tocopherols, ascorbic acid, phytosterols, dopamine, tannins and other phenolic compounds. Conventional and new techniques of extraction of bioactive substances from plant tissues are described. The effect of these substances on human cells is antioxidant, anti-inflammatory, antimutagenic and antitumor, promoting health and protecting the body from disease. Insight into the useful components obtained from the peel of beets and bananas shows that the further development of methods for their extraction and the utilization of biowaste is important.
