Abstract

U prehrambenoj industriji izuzetno je važno uspostaviti sustav kontrole higijene kako ne bi došlo do kontaminacije proizvoda. Jedna od najvažnijih kontrola je mikrobiološka čistoća namirnica i cijelog sustava u kojem se provodi prerada. Trenutno se za takovu kontrolu koriste klasične mikrobiološke metode čiji je najveći nedostatak dugi vremenski period dobivanja krajnjih rezultata, zbog čega su se počele koristiti brze screening metode. Cilj ovog rada bio je ustanoviti mogućnost primjene luminometrijskih metoda u sustavu kontrole higijene površina u prehrambenoj industriji, kao jednih od brzih screening metoda. Uspoređena su luminometrijska mjerenja sa klasičnim mikrobiološkim metodama na istim kontrolnim točkama utvrđenim HACCP planom. Luminometrijska mjerenja provedena tijekom istraživanja dala su rezultate koji su dobar pokazatelj stupnja higijene, kompatibilne sa klasičnim mikrobiološkim metodama. Usporedbom rezultata dobivenih pomoću triju metoda zaključeno je kako se luminometrijska mjerenja mogu koristiti u kontroli higijene unutar HACCP sustava kao brza screening metoda.

Abstract (english)

In the food industry it is extremely important to establish a system of hygiene control in order to avoid contamination of the products. One of the most important controls is the microbiological purity of the food and the entire system in which the processing is carried out. Currently for this control classical microbiological methods are used, whose biggest drawback is a long period of time required to obtain the final results. Because of this, rapid screening methods came into use. The aim of this study was to determine the possibility of applying luminometric methods, as rapid screening methods, in surface hygiene control in the food industry. Luminometric measurements were compared with classical microbiological measurements on the same control points established by HACCP plan. Luminometric measurements conducted during the study produced results that are a good indicator of hygiene level and are compatible with classical microbiological methods. By comparison of the results obtained using the three methods it was concluded that luminometric measurements can be used in hygiene control within the HACCP system as fast screening methods.
