Sažetak | U ovom radu analizirano je 20 uzoraka bagremovog meda i 18 uzoraka kestenovog meda iz 2019. godine s područja Republike Hrvatske. Metode korištene za određivanje pojedinih parametara propisane su od strane Međunarodne komisije za med. Fizikalno kemijskom analizom dobiveni su sljedeći rezultati: prosječni maseni udio vode u bagremovim medovima iznosio je 16,52 %, a u kestenovim 17,51 %, prosječna kiselost u bagremovim medovima iznosila je 17,65 mmol kgˉ¹, a u kestenovim 29,78 mmol kgˉ¹, prosječna vrijednost električne vodljivosti u bagremovim medovima iznosila je 0,18 mS cmˉ¹, a u kestenovim 1,1 mS cmˉ¹, prosječni maseni udio hidroksimetilfurfurala u bagremovim medovima iznosio je 6,12 mg kgˉ¹, a u kestenovim 4,39 mg kgˉ¹, prosječni maseni udio reducirajućih šećera u bagremovim medovima iznosio je 66,59 %, a u kestenovim 67,36 % te prosječni maseni udio saharoze u bagremovim medovima iznosio je 1,28 %, a u kestenovim medovima 1,02 %. Iz dobivenih rezultata može se zaključiti da velika većina uzoraka po ispitanim parametrima je u skladu sa zahtjevima iz Pravilnika o medu (Pravilnik, 2015). |
Sažetak (engleski) | In this paper, 20 samples of acacia honey and 18 samples of chestnut honey from season 2019 and the territory of the Republic of Croatia were analyzed. Methods used for determining individual parameters are prescribed by the International Honey Commission. Physicochemical analysis gave the following results: the average mass fraction of water in acacia honeys was 16.52 % and in chestnut honeys 17.51 %, the average acidity in acacia honeys was 17.65 mmol kgˉ¹ and in chestnut honeys 29.78 mmol kg-1, the average value of electrical conductivity in acacia honeys was 0.18 mS cmˉ¹ and in chestnut honeys 1.1 mS cmˉ¹, the avergae mass fraction of hydroxymethylfurfural in acacia honeys was 6.12 mg kgˉ¹ and in chestnut honeys 4.39 mg kgˉ¹, the average mass fraction of reducing sugars in acacia honeys was 66.59 % and in chestnut honeys 67.36 % and the averge mass fraction of sucrose in acacia honeys was 1.28 % and in chestnut honeys 1.02 %. From the obtained results it can be concluded that the vast majority of samples according to the examined parameters are in accordance with the requirements of the Croatian Ordinary on honey. |
