Abstract

Cilj ovog rada bio je izolirati Gluconobacter oxydans s jabuka te odrediti njezin mogući antifungalni učinak i utvrditi moguće inhibitorno djelovanje Gluconobacter oxydans 1J na plavu plijesan, Penicillium expansum 565, najvažnijeg uzročnik kvarenja jabuka u skladištu. Gluconobacter oxydans je gram-negativna bakterija koja ne tvori endospore i pripada obitelji Acetobacteraceae. Najveća antifungalna aktivnost bakterije je primjećena između 3. i 9. dana, kada nije zabilježen porast kolonija, dok je nakon 12. dana promjer kolonije plijesni manji za 42.3%. Klasičnim mikrobiološkim metodama, MALDI- TOF MS analizom i API-testom, izolirana je i identificirana prirodno prisutna mikroflora jabuka. Iako istraživana bakterija Gluconobacter oxydans 1J nije u potpunosti inhibirala rast plijesni u jabučnom soku, pokazala je visoku razinu učinkovitosti (72-78%). Gluconobacter oxydans 1J djelomično inhibira rast plijesni Penicillium expansum 565.

Abstract (english)

The purpose of this study was to isolate Gluconobacter oxydans from apples and investigate the possible antifungal and inhibition abilities of Gluconobacter oxydans 1J against blue mold Penicillium expansum 565, the most important postharvest decay of apples. Gluconobacter oxydans is a gram-negative bacterium that does not form endospores and belongs to the family Acetobacteraceae. The highest antifungal activity of this bacterium was observed between 3 and 9 days with no colony growth, while after 12 days colony diameter was reduced to 42.3 % respectively. Classical microbiological method, MALDI-TOF MS analysis and API tests were used for isolation and identification of the microbial population from apples. Although the investigated bacterium was not completely inhibited mold growth in apple juice, they showed high level of efficiency (72-78%). Gluconobacter oxydans 1J partially inhibit growth mold Penicillium expansum 565.
