Abstract

Glukozinolati su složena skupina spojeva tioglukozidne strukture svojstvena biljkama porodice Brassicaceae, u koju ubrajamo i brokulu. Kod brokule se osim vršnog, koriste i postrani cvatovi koji se razvijaju nakon berbe vršnog cvata i osiguravaju kontinuiranu opskrbu ovim povrcem. Postrani cvat brokule razvija se iz pazuha lista nakon ubiranja vršnog cvata i osigurava kontinuiranu opskrbu tržišta povrcem visoke nutritivne vrijednosti. U ovom radu cilj je bio utvrditi udjele ukupnih i pojedinacnih glukozinolata u vršnom i postranom cvatu tri sorte brokule- Fiesta, Heraklion i General u ljetno jesenskom roku 2008. godine. Postoji znacajna ovisnost udjela glukozinolata o vrsti cvata. Udio ukupnih glukozinolata veci je u postranim nego u vršnom cvatu. U sorti General najveci je sadržaj ukupnih glukozinolata. U vršnom cvatu sve tri sorte brokule sadržano je više alifatskih glukozinolata, dok je u postranom cvatu sve tri sorte brokule sadržano više indolnih glukozinolata.

Abstract (english)

Glucosinolates are a complex group of compounds thioglucosyde structure inherent in the plant family Brassicaceae, which includes the broccoli. Lateral broccoli florets develop after the harvest of top floret and provide a continuous supply of the market with this highly nutritious vegetable. Research with the aim to determine the proportion of total and individual glucosinolates in the top and lateral broccoli florets of three broccoli cultivars – Fiesta, Heraklion and General, was carried out during summer-autumn growing period 2008. There was a significant effect of floret type on the glucosinolate values. Proportion of total glucosinolates is higher in the lateral than in the top florets. The highest content of total glucosinolates is present in the cultivar General. Top florets of all three broccoli cultivars contain more aliphatic glucosinolates while lateral florets of all three broccoli cultivars contain more indole glucosinolates.
