Abstract

Sustavi upravljanja kvalitetom i sigurnošću hrane te certifikati koji ih prate bitni su elementi opstanka prehrambenih poduzeća na globalnom tržištu. Trgovački lanci sve više nadziru proizvodnju, prate potrebe kupaca, usmjeravaju razvoj proizvoda te svojim aktivnostima utječu na oblikovanje prehrambenih navika potrošača. Zbog toga trgovački lanci traže primjenu zahtjeva "trgovačkih normi" i certifikaciju prema tim istim normama. Jedan od najčešće upućenih zahtjeva prema proizvođačima prehrambenih proizvoda je ispunjenje zahtjeva International Food Standard (IFS) norme. IFS norma je danas jedna od najpriznatijih normi za sektor prehrambene industrije, a certifikat, dodijeljen kao potvrda usklađenosti proizvoda sa zahtjevima te norme, u trgovačkim krugovima predstavlja potvrdu ostvarenja visoke razine kvalitete i sigurnosti proizvoda. Cilj ovog rada je prikazati provedbu audita u proizvodnji vafel proizvoda, s ciljem implementacije norme prema zahtjevima IFS-a. Rezultati provedenog audita pokazali su da je IFS norma uspješno implementirana u tvornici vafel proizvoda.

Abstract (english)

Quality management systems and food safety and certifications that accompany them, are essential elements of survival of food companies in the global market. Retailers are increasing controll of the production, aticipating customers needs, directing product development and their activities affect forming of eating habits in consumers. Because of that retailers are seeking the application of requirements by "commercial standards" and the certification according to these same standards. One of the most common request sent to the producers of food products is to comply with the requirements of International Food Standard (IFS). IFS is now one of the most recognized standard in the food industry sector and certificate assigned as a confirmation of product compliance with the requirements of this standard is a confirmation of achieving high level of quality and product safety. The goal of this thesis is to show the audit conducting in production of wafers, with the aim of implementation of this standard according to the requirements of IFS. The results of audit showed that IFS was successfully implemented in the wafers factory.
