Abstract

Analiza opasnosti i kritičnih kontrolnih točaka (Hazard Analysis Critical Control Point – HACCP) je sustav koji na temelju promatranja kritičnih segmenata u proizvodnji osigurava zdravstvenu ispravnost hrane, a zasnovan je na primjeni ispravnih tehnoloških procesa i njihovoj kontroli, te nadzoru cijelog sustava. Ponuda zdravstveno ispravne i kvalitetne hrane uveliko pridonosi poslovanju ugostiteljskog objekta, a McDonald's kao kompanija koja na prvo mjesto postavlja potpuno zadovoljstvo gosta, najveći trud ulaže upravo u poboljšanje sustava koji osiguravaju kvalitetu i sigurnost hrane. HACCP sustav je implementiran u svim McDonald's restoranima u svijetu, a poseban tim stručnjaka konstantno nalazi nove načine za poboljšanje proizvodnje i sigurnosti namirnica i gotovih proizvoda, čime se postiže neprestano poboljšanje HACCP sustava u McDonald's-u, kao i kod dobavljača te distribucijskih centara.

Abstract (english)

Hazard Analysis and Critical Control Point (HACCP) is a system which, based on the monitoring of critical moments during a production, ensures an offer of correct and healthy food. It is based on the application and control of accurate technological processes, and on a supervision of the overall system. An offer of correct, healthy and quality food contributes a lot to a business of a restaurant. McDonald's as a company which main goal is to ensure Total Customer Satisfaction, puts the most efforts into an improvement of the systems which ensures food safety and quality of products. HACCP system is implemented in all McDonald's restaurants in the world and a team of experts constantly works on upgradeing of the production and food safety. Therefore HACCP system in McDonald's company and its distribution centers and manufacturers is constantly improved.
